WHAT IS AN “IN-A-PINCH” MEAL?

These are snacks for when you are famished and want to steer clear of the vending machines, donut shops, and fast food restaurants; or they are for three to four hours before dinner and you are not going to make it through class or another meeting. (If you ate animal products for lunch, you must wait at least three hours before changing to a different category of food). In-a-pinch meals are most ideal for when you do not have time to stop for lunch, or a nutrient-dense meal.

In addition to nuts, seeds, and dried fruits, good in-a-pinch snacks include: baby carrots, sliced red bell peppers, cucumber slices, crisp romaine leaves, celery sticks, apples, bananas, a “juice-box-sized” coconut water, coconut or almond milk, homemade trail mix (recipe on page 106), and unprocessed granola without nuts and minimal oil. Keep your snacks in a sealed plastic container or plastic bag if needed.

Your healthiest, most beautifying snack will always be raw veggies. I love chopping up raw sweet potatoes and sprinkling them with sea salt for a crunchy, tasty alternative to carrots.
